Saute vegetables for about 5 minutes. Add egg mixture to skillet and bake for 15-20 minutes.

Ingredients

  • 8 large eggs
  • 1/4 cup 1% milk
  • 2 garlic cloves, minced
  • 1/4 tsp. salt + more for taste
  • Black pepper, to taste
  • 1/2 Tbsp. olive oil
  • 4 green onions, chopped
  • 1/2 cup asparagus spears, chopped
  • 1/2 cup frozen sweet peas, thawed
  • 1/2 cup fresh mozzarella, chopped
  • 1/4 cup feta cheese crumbles
  • 1/4 cup fresh basil, chopped

Directions

  1. Preheat the oven to 400 degrees.
  2. In a medium bowl, whisk the eggs, milk, garlic and salt until well combined. Set aside.
  3. Heat oil in a 12 inch cast iron skillet over medium heat. Add green onions, asparagus and a pinch of salt and pepper and cook; stirring occasionally, until the asparagus is tender, but still bright green, about 5 minutes. Add the peas to skillet.
  4. Add egg mixture to skillet and gently shake the pan to distribute. Add the mozzarella and feta and bake 15-20 minutes or until the eggs are set. Add extra salt and pepper to taste if needed.
